Etsiz Patlıcan Yemeği ( meatless eggplant )

Welcome to Turgutreis, Bodrum, Mugla... Hope your stay with us will be enjoyable!!! We are still expecting some other guests on next week...Anyway, here's one turkish food that Ayşe Hala has made for us..Ayşe Hala is the sister of my father-inlaw..

PATLİCAN YEMEĞI
The easiest way of cooking this vegetable, served with fresh green peppers, cacik, and bulgur rice. In this recipe

Ingredients:
1 kg.Eggplants ( any kind of eggplant will do)
 2 medium onions
5 Tomatoes
4 Green peppers
1 head garlic
1 tsp.Tomato paste
1 tsp.Red pepper paste
Salt, black pepper, red pepper flakes to taste
olive oil
1 tbsp. margarine

Methods:

Step 1. In a clean bowl, wash and cut the eggplants into cubes. Soak cubed eggplants in water with salt, to remove the bitterness of eggplants and to prevent discoloration.




This is how Turkish women actually make their foods..without using any chopping board at all..

Step 2. In a clean casserole, chop onions, then green peppers.









This is Ayşe halam....





Step 3.  Add in  garlic cloves....








Step 4. Peel the tomatoes.







Step 5. Chop tomatoes.







Step 6. Add in seasonings.. salt, black pepper, red pepper flakes, tomato paste and red pepper paste.






Step 7.  Mix all the vegetables with the seasonings and pastes.






Step 8. Drain the soaked eggplants and add in to the rest of the mixed vegetables..







Step 9. Due to my casserole was not so wide to mix all the vegetables, so we used available big wide pan to mix all the vegetables.





Step 10.  Put back the mixed vegetables now to the casserole, and try to compress them all..







Ready for cooking now...add in the margarine and cover..turn on high heat first and wait for the vegetables to boil then lower down the heat and simmer till eggplants are soft and cook...best serve with cacik, bulgur rice and fresh green peppers.... Enjoy!! :)

Beef Stir Fry

BEEF STIR FRY

Ingredients:
1/2 kg. beef cut into very thin strips
1 whole onion cut into strips
2 garlic cloves
1 bell pepper - green, yellow or red
fresh chicharo (snow peas)
1 Tbsp. cornstarch
4 Tbsp. soy sauce
1 Tbsp. oyster sauce
olive oil
pepper
sesame seeds (for topping)- optional

Procedures:


Step 1. Slice beef into thin strips and marinate it with 1 tbsp. soy sauce for 15 mins. or overnight.





Step 2.After marinated mix the cornstarch until the beef is well coated.













Step 3. Heat the wok/fry when it's hot put the beef. Fry until it changes its color or brown in a high heat.




Remove the beef and set aside.













Step 4. On the same wok,add additional olive oil then saute the garlic and onion. Make sure the onion is golden brown before putting the beef again. Browning the onion makes the food taste great. 
stir in for awhile and bring in back the beef strips.




Step 5. Stir in for awhile then add the soy sauce. Don't put any salt because the soy sauce will its flavor and saltiness. 





Step 6. When the meat is tender, add the bell peppers and peas then add the oyster sauce. Don't over cook the vegetables. Turn the heat immediately and transfer the beef in a plate.
Serve it with steamed rice or pasta and sprinkle the sesame seeds on top.


It will save you more time because the cooking is less than 30 minutes and it's healthy. You can add some veggies if you want like cabbage, brocolli, atbp. :)

HomeMade Skinless longanisa

Homemade skinless Longanisa

This homemade skinless longanisa is made out of ground beef, and without any casing except for the stretch film that I used in molding up into this form.

Ingredients:
1 kg. gound beef
1/2 cup brown sugar
4 tbsps. Worcestershire Sauce
1 tsp. fresh cracked peppercorn
4 tsps. salt
1 tbsp. hot suce ( optional)
1 tbsp. garlic minced
2 tbsps. knorr seasoning ( optional )

Methods:





Step 1. Mix all the ingredients well.







This is how it will be...ready for wrapping.








Step 3. Get an ample amount of the mixture and lay it out to your stretch film, and start rolling the film to cover.





Step 4. Refrigerate for at least a day, so as the curing of the meat would be fine and you will achieve the best taste.
Step 5. Fry in a little oil. Serve with our plain rice or with garlic rice..!!

Etli Biber ve Patlican Dolmas ( Stuffed Pepper and Eggplant)

                                                                     ETLI DOLMALAR


Ingredients:
250 grams ground meat                                     1 kilo green bellpepper and eggplant
1 tea cup rice-washed and drained
1 onion medium- diced
2 tbsp. vegetable oil
2 tomatoes OR
1 tbsp. tomato paste
bunch of parsley and dill- chopped
salt, black pepper top taste                          
red pepper flakes

Procedures:




Step 1. Combine all the ingredients except for the bellpepper and eggplant, into a bowl.







This is what you will have after step 1...Let it set so the herbs and spices cam be mixed well.






Step 2. Wash and remove the seeds of the green bellpepper, twas easy for me to remove the seeds without breaking the pepper..with the use of my tool here... :)





With eggplant...scrape the flesh inside...








Step 3. Stuff now the bellpeppers with our filling.







Step 4.  Close the openings of the bellpeppers with slice of tomatoes and line them up into a casserole... add 2 glasses of hot water and cook under medium heat first then when boil, lower down to simmer.




 Step 5. Mix 2 glasses of hot water and 1 tsp. of tomato paste, and pour this to the peppers, cover and cook under meduim heat first, then when it starts to boil, lower down the fire to simmer... Cook until the peppers and eggplants are soft.






 Serve with yogurt!!! Enjoy!

Prawns in Hot and spicy tomato sauce

Prawns in Hot N Spicy tomato sauce

Yesterday was a big day here in Turgutreis, one of the biggest supermarkets in Mugla opened up yesterday here, KIPA... was just going around the supermarket when i noticed that there were fresh prawns and price was so so so cheap...just imagine...15-16 tl just for a kilo...and who wouldn't take this opportunity....missed so much of prawns and no second thoughts that i let my hubby bought one for me..even though he doesn't eat prawns...heheheh..anyway, gotta share the recipe now:

Ingredients:

  • 15 medium prawns/shrimps                             
  • ½ tsp minced garlic
  • 5 Tbsp diced tomato (fresh or canned)
  • salt, to taste
Seasoning
  • 1 Tbsp ketchup
  • ½ tsp Worcestershire sauce
  • 2 tsp hot sauce
  • 2 Tbsp brown sugar


Procedures:






Step 1. Mix together all the seasoning ingredients and set aside.





Step 2. Wash and drain prawns and season with salt.
Step 3.  In a wok, heat oil and saute minced garlic, till aroma smells.





Step 4. Add in the salted prawns., and stir till turns pink.








Step 5. When prawns turn pink, add in now the mixed seasoning that we
             have in the first step... stir till sugar melts and last, add diced
             tomatoes and cook till sauce becomes a little bit dry .
Step 6.  Garnish with parsley on top and serve. Enjoy!!

Glazed chocolate bundt cake

GLAZED CHOCOLATE BUNDT CAKE 

This chocolate cake is light, despite I used margarine instead of butter, adding chocolate ganache to this cake makes it more irresistible to our mouths!!!!


Ingredients:                   
                                                                                         Ganache:
2.5 glasses ( 350 gms ) flour                                        120 gr. bitter chocolate
1/4 glass  ( 25 gms ) cocoa                                          1/2 glass (115 gm) Cream
1 tsp.  bicarbonate                                                         2 tbsp. butter/ margarine
3/4 tsp. salt
1/2 glass Cream ( 115 gms ) ..krema in turkish            
200 gr. bitter chocolate cut into squares
225 gr. margarine/ butter soften
1 1/4 glass ( 250 gms) sugar granulated
4 large eggs at room temp.
1 pack vanilla powder

 Procedure:






Step 1. In a container, mix the flour, cocoa, bicarbonate and salt. Set aside.




Step 2. In a saucepan, pour in the cream, stir and let it boil till there will be small bubbles on the sides.


                                                                                 



Step 3. When it starts to boil, remove from heat and start to add in the chocolates. Stir till chocolates are melted.







This must be the outcome of this cream and chocolates. Set aside.


    



Step 4.  In a mixing bowl, beat margarine and sugar together till totally mixed.






Step 5. Add in the eggs and vanilla, continue beating.



  




This is the result of step 5.


 Step 6. Add alternately the flour mixture and chocolate mixture to the egg mixture ..in three intervals..end up with flour mixture.







 Step 7. Grease totally the whole bundt pan with margarine/butter.








Step 8. Pour the batter into the greased bundt pan and bake on a preheated oven at 180C for 20 mins. or until when a toothpick is inserted comes out clean. Let the cake cool for 10 mins. before removing from the cake pan.



   

 Viola!! here's my chocolate cake...you can serve just like this but if you do want to add some glaze on your cake..just follow the steps 2 and 3 with the ingredients for ganache and add the butter to the chocolate mixture. Pour the ganache over the cake and serve!! Enjoy!!
