Good day to all of you! Am just taking few minutes out from my house chores to be able to post some of my food recipes here for you.
A turkish meal usually starts with a thin soup, unlike we Filipinos that we love our soups with those big slices of meat and vegetables within...anyway, here's one soup that I would like to share to all of you,..reminding all of you that my recipes here are with ingredients that are easily reached by everyone of us.
Mercimek Corbasi ( Lentil Soup)
Ingredients:
1 teacup (çay bardak) red lentil (washed and drained)
1 potato ( cubed)
1 onion (roughly minced)
1 tbsp. vegetable oil
4 glasses hot water
salt, pepper to taste
Sauce:
1 tbsp. butter or margarine or olive oil
pinch of dry mint
pinch of red flakes
Method:
In a casserole, saute minced onion in oil till soften, add in cubed potatoes, saute in few minutes, follow in lentils then pour in hot water and cook till lentil is cooked. (Note.. don't cover the pan or water will overflow..).. when cook, season the soup with salt and pepper. At this stage you can serve the soup as it is, but we normally use a blender to puree the soup.
In a sauce pan, melt butter or margarine, but if you want to use olive oil, thats ok, add in the dried mint and red flakes, just stir a little..making sure not to burn the mint and red flakes, then pour the sauce on top of the soup and serve with slice of lemon... Afiyet olsun!! :)
Additional Note: 1 tsp. tomato paste can be added to this soup, before adding the water to the pan.
