zeytinyağli Kabak ( Courgette/Zucchini with Olive oil )

Zeytinyağli Kabak ( Courgette/Zucchini with Olive oil) 
This recipe is good for 2-4 persons.
Ingredients:
4 pcs. zucchini 
1 onion (medium)- chopped
2 tomatoes - cubed
3 cloves garlic- chopped
1 tbsp. olive oil
1 tsp. tomato paste
hot water
salt, pepper
yoghurt

Method:
Wash zucchini well, cut  lengthwise then cut into diagonal again as seen in the picture. 
In a casserole, pour in olive oil, saute onions till soften, add in zucchini, saute for few minutes, add in tomato paste, saute again, then add in the chopped tomatoes, followed with garlic, pour in just half glass of water then cover the casserole and cook in medium fire, don't let the casserole run out of water, you can add water more if you want..just make sure that your tomatoes are soft and full of juice for that will help in cooking your vegetable. When vegetable is soft and tender, season with salt and pepper to taste. When serving this dish, it can be served plain as it is, or either topped with yoghurt and dried red pepper flakes.
