Chicken Adobo (Chicken Pickled)

Good day everyone. Am back again here with my food trippings.... The weather here is bit cold now and my  appetite just savors for the foods that I have been missing a lot since then. Let me start with our native Chicken Adobo which I have been longing for so long now.
There are many ways in cooking this stuff but the least that I could share here is how to make it an easy way in preparing this  meal specially for those who are always on the go..

Ingredients:

4 chicken drumsticks and 8 chicken thighs
1/2 cup soy sauce
1/2 cup vinegar
1/2 cup water
6-8 cloves garlic peeled and crushed
2 tbsps. brown sugar
2-3 bayleaves
crushed peppercorn

Preparations:

Mix all the ingredients above and put them in your cooking casserole. Marinate the chicken for around 30 minutes.

After 30 minutes, just turn on the heat to meduim and let it boil, then lower down the heat at the same time covering the casserole. Let it simmer till the chicken is soft and tender around 30 minutes, then just flip the chicken parts.. DO NOT STIR.. and continuing simmering UNCOVERED till sauce thickens.

this is how the last cooking must be..sauce has thicken and shining with its own oil.

There's my chicken adobo paired with my jasmine rice..and who would ever not  like to have a side dish of avocado with sugar...the pinoy style ..just love it with my avocado.. Enjoy everyone!!

Homemade Beef Tapa

Beef Tapa / Beef Jerky

Ingredients:

250 gms. lean beef thinly sliced
1/2 tbsps. granulated sugar
1/2 tbsps. kosher salt  ( sea salt )
2 cloves garlic mincely chopped

Methods:

Step 1. Cut the beef into thin slices.

Step 2.  In a clean bowl, mix all together the ingredients except the beef.

Step 3. Mix well until sugar will be totally dissolved.

Step 4. Add the thin strips of beef.

Step 5. Mix together to cure the meat., cover with stretch film and store in the refrigerator for around 1-2 hrs.

Step 6.  After an hour of curing , this is the result. There are 2 ways of drying up this cured meat..drying under the sun and  drying though the oven.. Got no patience under the sun..so I choose this method of baking.

Step 7.  Lay out the strips of cured meat in a clean baking pan... Preheat oven to 200C... bake for 10-15 mins.

Step 8. After 15 mins...this is the dry strips of cured meat...ready to be packed or to be fried..

Step 9... Serve with fried egg and fried rice....Enjoy!!!

Homemade skinless Longanisa

This homemade skinless longanisa is made out of ground beef, and without any casing except for the stretch film that I used in molding up into this form.

Ingredients:
1 kg. gound beef
1/2 cup brown sugar
4 tbsps. Worcestershire Sauce
1 tsp. fresh cracked peppercorn
4 tsps. salt
1 tbsp. hot suce ( optional)
1 tbsp. garlic minced
2 tbsps. knorr seasoning ( optional )

Methods:

Step 1. Mix all the ingredients well.

This is how it will be...ready for wrapping.

Step 3. Get an ample amount of the mixture and lay it out to your stretch film, and start rolling the film to cover.

Step 4. Refrigerate for at least a day, so as the curing of the meat would be fine and you will achieve the best taste.
Step 5. Fry in a little oil. Serve with our plain rice or with garlic rice..!!
